A certain part of the berry, previously grown for the fresh market, will be sold by producers to processors involved in its freezing, says the director of Insolar-Cold.

The situation associated with a decrease in the volume of domestic and foreign markets for fresh berries due to the coronavirus pandemic, to some extent activates the segment of berry processing in Ukraine. After all, producers who are deprived of traditional sales channels will try to sell their berries to processors. Thus, the latter will not have problems with a shortage of raw materials, even despite the projected decline in yield this year. This opinion was expressed by Anatoly Bogdan, Director of Insolar-Cold, a company engaged in the design and installation of refrigeration systems for producers of fruits and vegetables.

“The coronavirus pandemic literally collapsed the global markets for fresh berries. The problems of non-fulfillment of obligations previously contracted by business partners, price reductions, and weather disasters, which affected berry plantations in Europe in general and Ukraine in particular, were supplemented by another shortage of labor. All of this will negatively affect the development of the 2020 market, ”says Anatoly Bogdan.

Under these conditions, Anatoly Bogdan predicts that a certain part of the berry, previously grown for the fresh market, will be sold by producers to processors involved in its freezing. “The real situation in the market, connected with the lack of demand for fresh berries, is pushing the berry growers,” says the director of Insolar-Kholod.

Speaking about the prospects of companies involved in processing and freezing berries for the berry season 2020, Anatoly Bogdan noted that in the face of declining demand and a large amount of supply on the market, the buyer will pay special attention to the quality of frozen berries.

“This, first of all, concerns such traditional types of berries as garden strawberries, blueberries, raspberries. Companies that process berries that offer on the export or domestic market, the so-called substandard goods, are likely to end the season at a loss, because no one will buy such a berry. In these conditions, the issue of the proper organization of the freezing process becomes especially relevant, ”says the specialist.

As noted by Anatoly Bogdan, shock freezing can be chosen as one of the methods.

“Specialists in the field of refrigeration equipment know that it is divided into two types – dynamic and static. Static freezing is optimal, especially with a small volume of processed berries – it is produced at a temperature of 35-42 ° C, and the berry is placed before sending it to the freezer on special racks. At the same time, all the necessary quality characteristics of the products are preserved, ”says the head of Insolar-Holod.

In turn, dynamic freezing occurs in quick-freezing tunnels. “Given the volume of production of frozen berries recorded in Ukraine in recent years, this type of freezing has become the most popular, because the productivity with this type of shock freezing starts from 1 ton of production per hour. It is also necessary to remember that it is necessary to cool the berries before freezing as soon as possible after harvesting, ”says Anatoly Bogdan about the nuances of the production of frozen berries.

Moreover, the specialist emphasizes that the quality of the berry depends on how quickly the freezing process occurs. “This may be crucial in the current environment. Indeed, in the 2020 season those producers of frozen berries who will be able to offer a quality product will win, ”the director of Insolar-Cold sums up.
